Cajun Pork Chop

Creole-inspired spices provide a bold flavor to juicy pork chops. Smothered in a sweet and spicy peach Bourbon sauce and served 
with dirty rice and vegetables.

Each meal includes a cup of soup and desert.

Chicken Cordon Bleu

Breaded chicken
 cutlets stuffed with ham and Swiss cheese. Roasted until golden brown and the cheese 
inside is melted. Served over creamy mashed potatoes with grilled asparagus.

Jim Cole 

Jim's laid-back New Orleans style of blues compliments the Cajun vibe of the evening. His soulful guitar and vocals are renowned in Mérida and beyond. Joined by Vinnie Luis, the duo will add a savory flavor to the evening.

Jim Cole started playing in a band when he was just 15,  honed his playing style while in New Orleans and has appeared all over the globe. He continues his musical journey in the Yucatán with Mérida native guitarist, Vinnie Luis. Their collaboration has enchanted audiences in and around Mérida for years.
